Get covid_hosp_explore and flu_hosp_explore running.
forecaster_testing doesn't run because it can't find the output joined_archive_data_2022. I didn't modify this since it seems to be nonstandard for testing purposes.
NB: covid_hosp_prod and flu_hosp_prod don't run because they don't have targets scripts defined (covid_hosp_prod.R and flu_hosp_prod.R, respectively, as given in _targets.yaml). That is outside the scope of this PR.
The shell script to run this doesn't work with the interactive project selection. I'd recommend either running this using Rscript directly, or selecting a project via a command line arg to the shell script.
