I just wanted to know how (if possible) I can change the sensitivity of steering if I am using this program for my current wheel. Is it possible to make it act as a normal wheel would (meaning spin out of control if I oversteer etc.)

You could try changing the on wheel sensitivity by pressing LB + RB and Y+B at the same time
