We would like to set up an interactive demo for new users. This requires a small, publically accessible VM where we can deploy flagd.

Yes, we'll be running an instance of flagd which is part of the OpenFeature project.
What kind of machines and how many do you expect to use (see: https://deploy.equinix.com/product/bare-metal/servers/)?
All of those machines seem overspec'd 😄 but the m3.small.x86 would be fine.
What operating system and networking are you planning to use?
