update mentors info for KubeEdge 2024 term1 projects #1155

I would like to make some adjustments to the mentors for project https://github.com/cncf/mentoring/tree/main/programs/lfx-mentorship/2024/01-Mar-May#support-latest-version-in-keink-and-run-demo-on-keink. Replace me with @HongbingZhang. Sorry for the extra work I've caused. Plz cc @nate-double-u πŸ˜ƒ

I'm not sure why it wouldn't have sent, and think they're probably the best resource for getting this sorted πŸ™‚
