Cleanup - remove the examples directory and fix docs #279

With PR to the stacks repository merged https://github.com/cnoe-io/stacks/pull/3 , we should remove the examples directory from the idpbuilder and update the docs to point to the stacks repo when pulling reference implementation and other integrations we have enabled.
