Describe the problem

The sink side of the changefeed could benefit from micro-benchmarks to track performance over time. We’ve suspected issues with the new batching sink logic during escalations. During pre-mortems, we were also concerned with potential performance regression on the new kafka sink. These microbenchmarks can help us better track that.
