Review / update architecture docs based on CRDB SIGMOD paper #10794

Last year, our team wrote a paper that had a lot of great (and up to date) information about how CRDB works, including its architecture. We should review the paper and our [architecture docs](https://www.cockroachlabs.com/docs/stable/architecture/overview.html] and make sure they match up.
