[BUG] - change "Open AI" to "OpenAI" when choosing embedding providers

Describe the bug Maybe not a bug, but also not a UX improvement I would argue. When choosing the embedding providers, I can choose "Open AI", but the company, which I think we are referring to, is called "OpenAI" ;)

To Reproduce Steps to reproduce the behavior:

1. Go to settings -> create embedding
2. See error

Expected behavior Display "OpenAI" instead.
