Clean up some stuff to prep for deploy action #41

Reason for removing codecov.json is that it's really a build output. It should be generated as needed imo. Additionally, it seems that Nick added AI PR review items to that file instead of the proper source files. Removing this should also help prevent that from confusing future contributors.
