Upgrade to firestore 8.1.2 #183

@codediodeio Is it possible to merge this? The package is currently unusable with current version for firebase v8+

Unfortunately my changes also caused instability in geofirex as they were rather crude and I could never get the unit tests working so beware. I'm currently using my changes for the sole purpose of being able to debug using the Firebase simulators (a v8+ feature) during development and still shipping with the 7.2.0 version.

If you want to use my changes, simply pull from my repo and give it a go!
