I also think @mollymcleod's working on Washington, @KHarshawat is pondering (cmonnnn) Colorado and @_giselles is aiming for a deep teardown of Tennessee's process from start to finish. Y'all should talk and compare notes at some point.
Also consider using ScreenFlow or another tool to capture the entire application process and then go back for screenshots. This is how @Useronboard does it.

I'm planning on doing one for the myCase Utah site. Maybe this has been addressed already or should be a new issue, but:
How do should I deal with going through the signup process through to completion for, say, food stamps and not actually trouble someone with an application?

The short answer is you can't (easily), but you can usually get all the way up to the end and just not click the final submit button, like @mollymcleod did for Washington: http://citizenonboard.com/snap/wa/#71. All of the CA applications have a similar signature/confirmation/submit page right near the end: https://github.com/codeforamerica/clean/issues/326
With that said, you'll certainly miss part of the process if you take this approach so it's up to you to weigh the relative cost on the system of a bit more paperwork and the benefit of increasing public awareness of the application process. Utah has a bit over 100,000 active food stamp cases cases for reference.

@annamatic so this project is somewhat dormant — our small team has been focusing on building a better SNAP application here in California, and scaling it out. I personally would love to see your experience trying to navigate the SNAP application in your home state though :) — and we'd proudly spread the word about your work via the Code for America twitters if you wished.

SNAP (formerly known as Food Stamps) is a federal program that helps low income individuals and families buy healthy food. It used to be called Food Stamps. Every State runs their own SNAP program and has an online application website. Help us document every SNAP application in the country.
