Updated project dependencies

[dsmith-digitalmint]

• updated the project to use node v20
• updated the project to use the latest version of yarn
• updated the CORS config
• fixed the restify plugins
• fix the queries to take in correct parameters
• verified the server still runs

as is this deploys to heroku and runs.
