Incorporate new Epic-Stack template updates like Remix v2.3.1

Followed this advice and manually looked at the epic-stack repo to decide to update.

This should be easy to merge as it still works the same way after my tweaks, even with all the changes.

A few new features I noticed while comparing the files:

• [x] new .env.example with important variables (please re-copy this) like HONEYPOT_SECRET="super-duper-s3cret"
• [x] cross-site scripting protection
• [x] Sentry.io integration for reporting errors to a central place, with React error boundaries.
• [x] Removed confetti and its library, bumps like 100 dependencies' version.
• [x] Fixes some of the other tests and basic permissions information in the DB
