Clarify why I/O is important #16

The purpose of the I/O demo was not clear. People were confused about why we are doing what we are doing in the demo.

We should clarify how this is a scientific workflow pattern many people run. We could

add a story around the example: What is the data? How was it collected? What are we doing with it?
can we make the demo problem I/O bound? Starve the CPU for data.
