Issue 47 - Add users/me Endpoint

Change Summary

Added the /api/users/me enpoint that displays the currently logged in users information. Currently includes fields shown in the screenshot below, but can add or remove as needed.

Other Information

Will need to try test with the frontend once the login modal is connected to the backend. Should work fine though!
