[Ready for review] Intro to Python - Update session 1 recap notebook #43

This PR:

Adjusts the example used in the Intro to Python session 1 recap notebook to something more accessible, and hopefully easier to teach from if required.

Note: There are potentially many other changes desired or required to this course, however, it was agreed to get this one in particular completed before the workshop session next month.
