The link to the ESP-S3-32S by Ai-thinker on aliexpress in the ordering_parts.md is no longer valid. If I chose "do not place this part" on JLCPCB does it still come with the order just not soldered on?

Do not place this part means that the part will indeed not be placed, yes. Feel free to place a pull request for the right Ai-Thinker module.
