Do we need https://github.com/cog-imperial/OMLT/blob/main/docs/notebooks/gbt.ipynb and https://github.com/cog-imperial/OMLT/blob/main/docs/notebooks/helpers.py, @ThebTron and @fracek? Or can these be deleted?
