Add docker desktop for linux to wiki docs #36

Now that Docker Desktop is released for Debian, Fedora, Ubuntu, and Arch we should use that and deprecate the more complicated docker engine installation instructions

Also remove Colima so the instructions are just Docker Desktop for all 3 platforms.
