feat: update example to expo 48 incl. other package updates #143

Update the example project to Expo 48. Expo 44 is deprecated and no longer works with the Expo Go app. This PR resolves this issue and allows users to run on their device.

@arancauchi would be great if this PR can be tested and hopefully merged as the current Expo Go app doesn't support Expo 44 (current version being used in the project)
