Move metadata from `.opam` to `dune-project` #135

This PR moves the metadata from morbig.opam to the dune-project file, leaving Dune in charge of generating the morbig.opam file. This involves bumping the version of the Dune language to 2.5, which requires a few other changes.

Rebased on top of #136 to benefit of a proper CI. As such, it should be merged after #136 (and therefore #137).
