ENG-3255: 'Update' updates - remove transactionID, add mobile field, make email mandatory #422

Waiting on the associated B/E updates as the transactionID is currently required, and also doesn't handle the new mobile field.

@AndyEPhipps I've deployed the changes for the giftaid service to staging. Let me know when you have the time to have a look at this and then we can coordinate the release of the FE, backend and erp services into production.
