add new tracing configs #168

Why do we need this PR?

Because we've recently added some helpful extra config for tracing that should be exposed in the helm chart!

Changes proposed in this pull request

attributes and headers are maps, I think it's a nicer way to specify rather than requiring a comma-separated list of colon-separated pairs
