some improvements to CJ's notebook #2

Added the pangeo binder link, "fixed" @CJ-Wright's notebook to get the missing dependencies and data, sorted the language figure, added an interactive plot at the end.

Fixed it in the last commit, had a copy-n-pasta there, sorry.
