Readme: Remove specific PyPy version for Mambaforge #376

It's already listed above at Miniforge-pypy3, Mambaforge uses the same version.

Small follow up on #375.

PS: For single-commit PRs, you should consider merging using "Squash and merge". That reduces the number of merge commits in the main branch. See the GitHub docs.
