Remove pin on Python version #37

Just removing the pin on the Python version, let's see what works and what doesn't...

I see this doesn't create any CI jobs for Python 3.12, so there is more to it than this.

We needed the rerender above. BTW, it works!

In conda-forge, when in doubt, always re-render ;-p
