Bump sqlalchemy version

Description

The upgrade path from sqlalchemy 1.4 -> 2.0 was designed to have a seamless upgrade path. This PR updates:

• the project dependency
• the conda recipe
• updates how some tests are formed to ensure that test objects are properly created
• updates sql alchemy types as per https://docs.sqlalchemy.org/en/20/changelog/whatsnew_20.html#migrating-an-existing-mapping
