Feature description

Currently integration tests file while trying to reach haris-redshift-cluster-2.cricdtjk6gta.us-east-1.redshift.amazonaws.com, as the instance only existed while developing the connector. To automate our dependabot updates (but also for any other PR) we need to run tests, ideally against a real instance, to ensure the connector works before we merge the PR.

For the record, Lovro and I mentioned in another issue that LocalStack supports Redshift, so it looks like that's the best option here.
