We are thinking on using latest versions of Confluent kafka, Kafka connect for couchbase DB. Please suggest how do we do it, in the current release it looks like 6.1.0 version of confluent. Is it possible for us to just change the versions in the charts and enhance these confluent helms installations ...

Yes, you can clone and change versions as you wish.

However, if you are just running Kafka Connect, the Strimzi KafkaConnect CRDs would be more recommended (are are actually still maintained)
