Updates version to 1.2.0 #39

Updating the Pet Store demo to Version 1.2.0. This should trigger a push of the latest image to DockerHub.

The new image will include summon and summon-conjur binaries in the image to make it easier for scenarios where we'll use summon/summon-conjur for integrating with the app.
