I'm also very interested in this option as the VNC feature with it's simple passwords proves as an incredible security weakpoint. It basically provides an attacker direct access as if he would be in front of the machine itself. A temporary fix: On linux you can configure SELinux to limit privileges or prohibit login on the local terminal. But that is useless the moment an attacker manages to restart the machine and it loads into the boot menu.
This along other features are currently under implementation into the cli.
In the meantime to cover this you can disable the vnc from my.contabo.com
