Updates readme to better describe after setup process #158

setup now writes .env files versus a json config
updates .gitignore to exclude files that should be kept from source
changes sample file to match current setup output

It looks like a useful addition to the setup process ! I've been puzzled with this one at the beginning.

thanks same here. Unsure how active this is these days, noticed the last commit was from a couple months back and it's getting pretty behind on the current gatsby version 🤷

@jpalmieri maybe I should follow and just close, its not rocket science I am doing here, was just trying to be a good citizen 😂
