fix: fastify example #268

the fastify example did not work, also the link to codesandbox was wrong.

@rburgst its not really being maintained these days I am one of the maintainer of graphql-yoga and would recommend you try that out :) also a detailed response here re Helix https://github.com/contra/graphql-helix/issues/251#issuecomment-1179346484
