Move all the `.profile_*` files to a subdirectory #70

I'm thinking of calling the subdirectory .profile.d. Main challenge here would just be updating their paths in all the places from which they're referenced (Xcode project, configure script(s), GitHub Actions workflow(s), etc.)...
