Fix Appveyor CI #3

For some reason Homebrew doesn't install gtk-doc properly... I might actually just want to remove the Mac builds, but idk if I should do that before or after I've converted Travis to GitHub Actions...

been working on this in PR #1 but now I give up

ok so I merged PR #1, but that only got the Linux CI working on GitHub Actions; Mac CI still needs fixing...

I think I might have meant on Travis? Anyways I canceled my subscription to that... Appveyor is still failing on me, though...

Current failure is in trying to find freetype2's pkgconfig file...
