Adds FTW tests to the CI

Closes https://github.com/corazawaf/coraza-caddy/issues/62. I finally managed to have some stable results. This PR:

Makes FTW tests work
Adds FTW tests to the CI
Swaps the logs to console format, therefore no more hacky tweaks to the CRS test are needed
Swaps logs to console format also for the Example, making it more user-friendly.

Notably, there are about 100 tests are are flaky or failing. They are currently all excluded. The next needed step is investigating why they are failing, maybe after a CRS update (CRS v4.0rc2? 👀)
