Fixed various IO related issues #7

Fixed an issue where files wouldn't always be created if they were inside nested folders (f0d14fa)
Abstracted some reused logic into a new function (f0d14fa)
Swapped to using A1111's built-in paths instead of relative paths for extension imports (5d6bebb)
Changed IO read/write encoding to UTF-8 to support a wider variety of characters (e1d5625)

I really appreciate you taking the time to fix some of the IO issues, I would not have caught these and I think pulling that file reading out into a method was really good design!
