This PR is an adjunct to PR https://github.com/corona-warn-app/cwa-documentation/pull/829 "docs: deprecate cwa-risk-assessment.md" which deprecates the document cwa-risk-assessment.md in favour of the updated section Mobile Applications in the Solution Architecture document.

This PR updates the README (EN) and README (DE) files by replacing the links to the deprecated documents:

cwa-risk-assessment.md and
cwa-risk-assessment.de.md
