Use new versions for clickhouse and prometheus that support features for Openshift

Can you please test the upgrade process? Specifically, install the chart before the changes and then upgrade.

Use new versions for clickhouse and prometheus that support features for Openshift

The install works (I just pushed an update that prevents unnecessary components from starting)

The upgrade does not work. There are multiple issues like this where backwards compatibility is not possible.
