feat(headless): analytics actions updated to send valid ep events

The changes to Coveo Relay Event Types have been introduced in the following PR: https://github.com/coveo-platform/analytics_schema/pull/478

• Coveo Relay Event Types library updated to latest version.
• Updated analytics action that send EP events for RGA.
• Updated analytics action that send EP events for Smart Snippets.
• Updated analytics action that send EP events for Case Assist.
• Added to Todo comments after skipping some of Quantic E2E tests, these will be tackled separately in a next PR.
