[Health] Add characteristic data from HealthKit

Added the following characteristic data from the Health Kit:

• GENDER
• BIRTH_DATE
• BLOOD_TYPE

Thank you for your PR. Could you please make the following additions?

• Extend the example app and provide a demo video to show that the characteristic data can be fetched
• Update the documentation (README) with the new data types
