Right clicking a sign with a sign in your hand or offhand will copy only the text to the sign in your hand. Right clicking with a stack of signs will copy the text to the whole stack.
Additional functionality could be to shift right click air to clear the signs, but you can also just place one, edit the text and copy the empty sign again. Your choice which would be better.
