Resolves update PRC example credential

What kind of change does this PR introduce?

Credential property & values update.

What is the current behavior?

PRC does not utilize renderMethod and has out of date property names (expirationDate vs validUntil) - see citizenship vocab

What is the new behavior?

Updated fields, values, and implementation of renderMethod

NOTE: This uses the examples context instead of the appropriate context, because VC v2 and renderMethod are not yet stable.

Does this PR introduce a breaking change?

How has this been tested?

Locally rendered and issued.
