Update to reference new structure for Access-Platform submodule #11

CIHM::Meta::Kivik uses validation information in Access-Platform submodule.

Referenced in Docker container as "/home/tdr/Access-Platform/couchdb"

This relates to https://github.com/crkn-rcdr/CIHM-Meta/issues/38 , which I closed.

Question for @SaschaAdler ,

Should I create a tag of https://github.com/crkn-rcdr/Access-Platform that predates the older directory structure changes until we have validation in https://github.com/crkn-rcdr/Access-Platform/issues/81 , at which point Access-Platform would no longer be a Git submodule?

I'm wanting to avoid accidentally breaking CIHM::Meta::Kivik in the interim while we build the replacement API.
