Update/theme cleanup

• Updated the Readmes
• Updated the use of the scaffolding_post_meta function as it does not need to echo twice in the function and template
• Updated the front page template to be more inline with WP code standards
• Updated the home page template to be more inline with WP code standards
• Updated the search results page template removing micro data that should be handled by a plugin as well as cleaning up the header and footer of the page to be inline with WP code standards
• Cleaned up the page template to be more inline with WP coding standards
• Added basic theme.json file to allow working with and set up of block editor options
• Removed site map template to replace with another solution
• Remove iphone scroll fix script as it is not needed
• Remove the WooCommerce and Gravity Forms includes for the time being
