Use tracking pixels to monitor visits by Contacts #37

As an internal user, I want to know when and how often one of my contacts visits any of our web pages or views one of the documents sent in an email. This should be tracked as activity with the contact record.

Looking at matomo as a solution for this. Front end dev will be installing matomo plug in for gatsby to generate user tracking capability. Will need to set up on-premise or cloud, whichever works better for current backend.
