add acquis volume to NPM docker-compose.yml example #14

Add the ./crowdsec/acquis.yml config file to the volume mounts in the NPM docker-compose example, without this, we are looking in the correct log folders

also adding the crowdsec-config volume to persist the crowdsec config.
