fix enabling ITCH_IO and RELEASE_ANDROID options #74

ITCH_IO and RELEASE_ANDROID options weren't working for me. Had to make these changes to get them to work.

Hi @jrassa thank you for upstreaming the fix!
I'll do some more tests with the new release of the template with official 3.5 support. Probably something changed with Github actions and it broke the Itch and Android options.
