We don't have JupyterLab Real-Time collaboration set up (yet!) on EarthscapeHub.
Working through a Git repository would be OK. Just be sure to commit changes to the notebook when it's in an un-run state. It's also still (when I last checked) kinda unpleasant to diff notebooks, although there are tools available.
Is there a way that my student and I could work collaboratively on the same notebook (similar to Google Collaboratory), or at least being able to work with consistent versions (e.g. with git)?
