moved discussion of binary files to optional extension material
added additional exercises / explanations as appropriate

TO DO:

check all input files exist / make them if they don't.
check all code blocks work
consider moving discussion of close to a callout, and just starting upfront with the recipe we want them to use (with open(my_file) as:)
consider separate filehandling episode that delves into working with lines, e.g. split() method

Thanks Kerensa. I tend to overcomplicate the material. I think I am still getting a handle on the right difficulty level.

It's a constant process of refinement ... every time I think I've streamlined / simplified enough I realise I need to do so again after teaching the material. Gets better after every school.
